The pumpkin that strange fruit of the earth .... how to cook for me is always an enigma.
At the end I choose to make a risotto, or of the dog food, or do it in the oven.
This evening I found myself again with a slice of pumpkin, a small but meanwhile how do I do? Why not
omelette I said to myself. As it is not sufficient for a portion but with the addition of some other ingredient that I have in the fridge, maybe a prescription remedy for two!
and then here I am at work ... I passed quickly in a pressure cooker the slice of pumpkin.
then chopped into thin slices.

I sliced \u200b\u200bthin thin two shallots and I made them wilt in the oil in a frying pan. Once golden shallots I added the chopped squash and cooked over low heat for another ten minutes.
time beat two eggs, which I added some 'grated parmesan, a little' salt and pepper and a pinch of summer savory.
overturn the pumpkin in the pan and cooked like a regular omelet ... and ready to serve.
cooked and eaten more than that, almost live, in fact, I greet you, go and eat an omelette! Bon appetit!
